I'll be adding a 'COOK-OFF' section to my blog to share recipes and maybe add tutorials if possible.
For my first cook-off, I'll be sharing my own recipe for Baked Rice with Chicken and Mushroom.
If y'all are seafood lovers, feel free to use seafood or fish fillet instead of chicken.
* I'm unable to provide you with the measurements/servings as I went along with my own feel and taste.
** No pictures for step-by-step process or end product cause' I'm was too busy cooking and controlling the fire.
INGREDIENTS
Cooked Rice
Chicken Fillet (diced/cubed/bite-size | PLEASE MARINATE)
Mushroom of your choice (sliced)
Pan-Fried Egg (Cut into strips)
Campbell's Mushroom Soup OR Alfredo Pasta Sauce (I prefer Alfredo Pasta Sauce)
Mozzarella Cheese
Butter
Onion (Sliced)
Seasonings (Salt & Black or White Pepper | I prefer Black Pepper)
* Optional: Parsley for garnishing
HOW-TO-COOK?
1. In a heated pan, melt the butter. Add the onion slices and saute until brown.
2. Spread marinated chicken cubes over the pan and fry, on both sides till cooked.
3. Toss in mushrooms and sliced pan-fried egg.
4. Pour Alfredo Pasta sauce over and let it simmer for awhile. (Be generous with the sauce)
5. Stir in cooked rice and stir-fry, add more sauce if it's too dry. Add water, only if desired.
6. Time to add seasonings.
7. Scoop out the rice into ALUMINIUM FOIL BAKING TRAY
8. You can choose to let it cool down first or proceed to Step 9.
9. Sprinkle mozzarella cheese on top of the rice, cover fully.
10. Bake for 15-20 minutes until cheese starts to melt or is slightly browned.
11. Garnish with Parsley. Serve hot!
TIPS
- When adding the mushroom soup/ pasta sauce, be generous otherwise the baked rice may turn out too dry.
- Ensure that chicken cubes are well marinated, otherwise it will taste bland.
- More black pepper to taste.
